CHESTNUT PIE: A TRADITIONAL EASTER DESSERT ON OUR PROVINCE’S TABLES

It is traditional on Easter day, in the Asti region, to cook the chestnut pie as dessert. It might seem odd to someone: chestnuts are a typical Autumn food, but there is an explenation for this choice. In the past, chestnuts were extremely important for farmers economy: this nut used to be dried and stored for all winter. The last ones were consumed during Easter. It was during that period that this beautiful tradition began: it marked the end of Lent. We serve this dish with our Avié Moscato Passito. Here are the ingredients for 10 people : ½ Liter of whole milk ½ Kilo of dried chestnuts 4 whole eggs 6 spoons of sugar 4/5 spoons of unsweetened

Cascina Castlèt is getting ready for Vinitaly 2024, the wine fair scheduled to be held in Verona from Sunday the 14th to Wednesday the 17th of April. Our stand is in Pavilion 10, position L3. The new vintages on release available for tasting at the stand: Litina Barbera d’Asti, Moscato d’Asti, Ataj Chardonnay, Castlètrosé, Uceline Uvalino, Barbera d’Asti Vespa, Policalpo Monferrato Rosso, Avié Moscato Passito, Passum Barbera d’Asti. Litina, Passum and Uceline Uvalino will also be present at the stands of the Consorzio della Barbera d’Asti and Moscato d'Asti in Consorzio dell'Asti Area H, in front of pavilion 8, near the Piemonte restaurant. On Valentine's Day we remember aunt Litina

Today, on St. Valentine's Day, we remember Aunt Litina, who brought this vineyard, which gives us a wine named after her, as part of her dowry. She loved red roses and we've planted a red rose bush at the end of every row of vines. This is a picture of her wedding to Uncle Batistin in the early 1900s. Happy St. Valentine's Day everyone!
PASSUM 2023, IT'S THE PERFECT TIME FOR CRUSHING GRAPES

We are crushing the Barbera grapes, that will become our Passum 2023! We picked them by hands, in smaller baskets, at the beginning of october. After the harvest, they rested for almost a month in the grape-drying room to achieve the perfect dryness. Every week, our enologists Giorgio Gozzelino and Roberto Austa check the surmaturation degree until the grapes reach the perfect moment for the crushing process. Now, we let the fermentation process begin. We will be racking in two weeks. Welcome into our winery, Passum 2023!

We had the pleasure to host a group of brazilian enologists from Costa do Sol – Rio Grande do Sul – in South Brazil, on a study trip. Many of them have Italian origins and the wish to know their roots, the places from which their ancestors immigrated. The group was escorted by professor Vincenzo Gerbi, who held enology lessons in Brazil and lead the wine tasting with mastery. The tour of our winery was held by our enologists Giorgio Gozzellino and Roberto Austa. Our guests continued their day at Costigliole d’Asti Castle to visit the Barbera d’Asti Consortium. Today, 2023 August 30, I begin my 53rd harvest!

Ready, steady, go! The 30th of August 2023 marks the official start of the harvest for Cascina Castlèt: we've started picking the Chardonnay. The grapes are fabulous. The next in line is Moscato, then Barbera and, last but not least, Uvalino. 2023 is my 53rd harvest. I still feel the very same emotions I felt during the first one. Thanks to my team and our fond customers who made them possible, to the people whith whom we walked, have walked and will walk side by side during this wonderful jurney. Thanks from the heart to everyone, for giving purpuse to every day of hard work.

A BookCrossing house in our vineyards for swapping books. “Bookcrossing” is a widely known and widespread practice: it consists of leaving a book in a public place so that another reader could find it and freely read it. Spot a book and then you can read it and: - bring it back to this wooden house - bring it back to another wooden house - keep it. Then, bring another book to repopulate the wooden house
